Key Lime Pie

Delicious key lime pie recipe from the Lake Kitchen!
Key Lime Pie
Ingredients
- 1 package or 9 gram crackers
- 1/3 cup sugar
- 5 tablespoons butter, melted
- 3 egg yolks
- 1, 14 oz. can of sweetened condensed milk
- 2/3 cup fresh squeezed key lime juice

Preheat your oven to 350°.

Grease an 9 inch pie plate.

In a food processor blend gram crackers and sugar until fine crumbs form.

Pour in melted butter and blend together in short pulses.

Press gram cracker mixture into the pan with the bottom of a measuring cup, making sure the bottom and the sides are even and compact.

Bake for 10 minutes. Remove from the oven and set aside.

Rinse out your food processor. Add egg yolks and process 20 seconds, slowly add the sweetened condensed milk.

Once the sweetened condensed milk is fully incorporated, keep your processor running and add lime juice and process for 30 seconds.

Pour filing into baked crust.

Put back into the oven for 15-20 minutes, or until it doesn’t giggle much when you wiggle the pan.

Let cool at room temperature until pan is cool enough to touch. Keep in the fridge for a minimum of 2-3 hours to chill.

Serve chilled with a dollop of whipped cream.
